BUTTERMILK POUND CAKE

"Tangy, moist, and flavorful pound cake. Can be eaten plain or use as a base for numerous dessert ideas."

Ingredients

  • 3 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter
  • 3 cups white sugar

  • 6 eggs
  • 1 teaspoon lemon extract
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

Directions


  1. Preheat oven to 325 degrees F (165 degrees C). Grease one 9 or 10 inch tube pan. Mix together the flour, baking soda, and salt. Set aside.
  2. In a large bowl, beat butter with sugar. Mix in the eggs, one at time, beating well after each addition. Stir in the lemon and the vanilla extracts. Gently mix in flour mixture alternately with the buttermilk. Pour batter into the prepared pan.
  3. Bake in preheated oven for 90 minutes. Do not open oven door until after one hour. When cake begins to pull away from the side of the pan it is done. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

COCONUT POUND CAKE

Coconut Pound Cake 

This pound cake is SO moist and so delicious! It will quickly become a new favorite!

Ingredients
1 cup butter
1¾ cups sugar
3 eggs
½ teaspoon vanilla
2 teaspoons coconut extract
¾ cup buttermilk
1 cup sweetened shredded coconut
2½ cups flour
2 teaspoon baking powder
1 teaspoon salt
COCONUT GLAZE
1½ cup powdered sugar
2 Tablespoons milk
1 teaspoon vanilla
1 teaspoon coconut extract

Instructions
Preheat oven to 350 degrees F.
In a large bowl, cream butter, sugar, and coconut extract together for 3 to 5 minutes.
Add eggs one at a time and beat an addition minute per egg.
In a separate large bowl, mix and combine dry ingredients together.
Add dry ingredients alternatively with the buttermilk to the butter/sugar/egg mixture.
Fold in shredded coconut.
Grease and flour either 2 large bread pans or 3 small bread pans.
Pour batter and bake at 350 degrees F for 55 to 60 min.
Let loaves cool and pour glaze over them.
COCONUT GLAZE
Whisk glaze ingredients together until smooth.

TRINIDAD MACARONI PIE

400 grams (14 oz) macaroni
2 large eggs
2 1/4 cups grated cheddar cheese
1 can evaporated milk (370ml – 12.5 oz)
1/4 habanero or scotch bonnet diced fine (optional)
1/2 medium onion diced very small.
fresh cracked black pepper
1/4 teaspoon salt
2 tablespoon butter
paprika (dust onto pie before baking)
1/3 teaspoon dry mustard
In a large pan put enough water to cover the macaroni, to boil. When the water starts boiling, salt and add the macaroni. Try not to overcook the macaroni, so we’ll only boil it for about 5-8 minutes or so. While this boils, we’ll prepare the other ingredients.

Start by dicing the onion and hot pepper as fine as you can. Then in a large bowl, add the diced pepper and onion, dry mustard, dash of black pepper, salt, eggs, butter and evaporated milk. Whisk together so everything is mixed thoroughly. Grate the cheese and add to the mixture, but keep back about 1/2 a cup to spread on top of the pie before baking.

The macaroni should be cooked by now, so go ahead… drain and allow to cool a bit, then add to the mixture we just made. Preheat your oven to 350 F.

Grease a baking dish (fairly deep) as you would if you were making a cake or bread so the pie does not stick to the sides. Then add the macaroni mixture we just made. Using a spoon push down and level off. The final step before baking is to sprinkle the remaining cheese and dust with the paprika. When the oven comes to temperature place on the middle rack and allow to cook for about 30-40 minutes. You’re looking for a firm pie with a golden top. Allow to cool a bit before slicing.

Tips.
1. If you don’t like biting into onions, you also have the option of grating the onion so it’s more fine than you could possibly dice. The other option is to use onion powder. Personally I love the flavour and texture of the diced onions. While we’re still on onion topic, if you can get sweet onions like a Vidalia, try using those as the dish won’t be overpowered with onions. (other types of sweet onions include the Sweet Imperial, the Spring Sweet, and the Walla Walla)

2. To reduce the heat from the diced habanero peppers, avoid using the seeds or close to the stem. The bottom part is usually less potent. The heat from the pepper does give the dish a nice finish so if you can’t stand the heat from the habaneros or scotch bonnet, try using something a bit milder.
3. If you’d like to add some more flavour to this you can always add a crushed chicken bouillon cube to the liquid mixture we made.

WHITE CHRISTMAS CHOCOLATE TRUFFLE TART

White Christmas Truffle Cake

Ingredients
For the cake layer
  • 3 eggs
  • ⅓ cup/65 g sugar
  • ⅓ cup/45 g flour
  • 1 tsp vanilla extract
For the truffle topping
  • 1¼ cups/ 300 g double cream/heavy cream
  • 12 oz/350 g white chocolate, chopped
  • 9 oz/250 g mascarpone or cream cheese
Instructions
For the cake layer
  1. Preheat the oven to 350F/180C. Butter and dust with flour an 8"/20 cm round springform pan.
  2. Beat room temperature eggs, vanilla and sugar in a medium bowl for about 3 minutes with an electric mixer until white, foamy and triple in volume.
  3. Fold sifted flour in 3 additions with a spatula, be careful not to deflate the cake batter.
  4. Bake in the preheated oven for 15-17 minutes until a cake tester comes out clean. Cool on a wire rack.
For the truffle topping
  1. Bring the cream in a saucepan to a boil. Add chopped white chocolate and stir with a whisk until the chocolate in melted and completely incorporated into the cream. Let the mixture cool completely.
  2. Add mascarpone or cream cheese and whip with a hand mixer until smooth.
  3. Pour the truffle mixture on top of the cake in the springform pan and chill in the refrigerator for at least for 2 hours or better overnight.
  4. Run a knife along the sides of the cake to release it from the pan, then carefully unmold it and move to a cake stand.

WHITE CHOCOLATE BUTTERCREAM


White Chocolate Buttercream
INGREDIENTS
* 2 sticks (1/2 pound) unsalted butter, softened
* 12 ounces white chocolate, melted and cooled slightly

1 cup confectioners' sugar
1 teaspoon pure vanilla

Beat together

WHITE CHOCOLATE BROWNIES


White Chocolate Brownies (Blondies)

Ingredients

8 oz premium white chocolate finely chopped
1 cup butter cut into Tbsp-sized pieces
1 1/2 cups sugar
1 tsp vanilla extract
2 eggs
1/2 tsp salt
2 1/4 cups all-purpose flour
1/3 cup melted white chocolate chips for drizzling (optional)

Instructions

Preheat oven to 350F and line a 9x9 square pan with parchment paper (or grease pan)
In a large, microwave-safe bowl, melt your white chocolate and butter together at 15 second increments (pause between each increment to stir well, you do not want the chocolate to get too hot or it may seize).
Stir in sugar and vanilla until well-combined.
Add eggs and stir well.
Sprinkle the salt over the batter and stir until all ingredients are well-combined.
Gradually add flour to the batter, stirring until completely combined.
Spread into prepared baking pan and bake on 350F for 40-45 minutes (a toothpick inserted in the center should come out clean or with few crumbs -- not wet with batter).
Allow to cool, then cut and drizzle with melted white chocolate. Allow to set until chocolate hardens (this only takes about 5 minutes) and enjoy!

SHRIMP AND GRITS CASSEROLE

INGREDIENTS
2 tablespoons butter plus more for baking dish
1 bunch scallions, white and light-green part only, chopped
1/2 large red bell pepper, chopped
1 jalapeño pepper (seeded if desired), finely chopped
2 cloves garlic, minced
1 can (10-ounce) diced tomatoes with green chiles, drained
2 cups chicken broth
1/2 cup quick-cooking grits (not instant)
salt and freshly ground black pepper, to taste
12 ounces large shrimp (16-20 count), peeled, deveined and cooked
2 slices bacon, cooked and crumbled
1 large egg, beaten
1 1/4 cups shredded Gouda cheese, divided

INSTRUCTIONS
Preheat oven to 375 degrees. Butter an 8 x 8 baking dish. Set aside.
Heat butter over medium-high heat. Add the scallion, red bell pepper and jalapeño pepper. Reduce heat to medium, cook 4-5 minutes or until beginning to soften.
Stir in garlic, diced tomatoes with chiles and chicken broth. Bring to a boil. Slowly stir in grits. Stir continuously until mixture returns to a boil. Reduce heat to low. Simmer, stirring occasionally, for 5-7 minutes or until thickened. Remove from heat and cool slightly. Season to taste with salt and black pepper.
Stir in shrimp, bacon, egg and 1 cup cheese. Transfer to prepared baking dish. Sprinkle with remaining cheese.
Bake for 30-35 minutes or until heated through and bubbling. Let stand 5-10 minutes before serving

Notes
MAKE AHEAD: Can be assembled 24 hours in advance. Baking time may be longer if casserole is super cold from the refrigerator. FREEZER-FRIENDLY: Cool, wrap securely and freeze. Thaw at least 24 hours in the refrigerator. Increase baking time if casserole is super cold.
