THREE MEXICAN SAUCES

Green Chile & Cilantro Sour Cream Sauce
This is a tangy sauce that is delicious smothered on burritos or enchiladas! Tangy and slightly spicy. 

Ingredients: 
1 cup fat free sour cream 
1 7-oz. can diced green chiles 
salt & pepper, to taste 
1/2 teaspoon lime zest 
2 tablespoons lime juice 
1/4 teaspoon cumin 
1/2 cup loosely packed cilantro 

Directions: 
Place sour cream, green chiles, salt, pepper, lime zest, lime juice, cumin and cilantro into a blender. Pulse and then blend until smooth. Use as desired. 

Favorite way to use this sauce:
Pour it over some freezer burritos that have already been warmed through. Top with cheese and broil until hot and bubbly! The fastest and tastiest dinner ever. Would also be delicious baked onto some enchilada. 


Red Enchilada Sauce
So much better than store bought, and probably a lot simpler to make than you think! 

Ingredients: 
2 tablespoons vegetable or canola oil 
2 tablespoons all purpose flour 
2 cups chicken stock 
3 heaping tablespoon chili powder 
1/4 teaspoon cumin 
1/2 teaspoon garlic powder 
1/2 teaspoon salt 
1/4 teaspoon oregano 

Directions: 
Pour oil into small saucepan and heat over medium heat. Sprinkle in flour and whisk. Cook down 1 minute before whisking in chicken stock. Pour in liquid and whisk to remove lumps. Stir in seasonings and simmer 5 minutes. Reduce heat to low. Pour over enchiladas as desired and bake. 

Favorite way to use this sauce:
Obviously, for enchiladas! But, more specifically, zucchinis that have been hollowed out and stuffed with a cheesy chicken enchilada filling! These are delicious and low carb!  Would also be delicious just baked with some chicken to shred for salads. 

Sour Cream Taco Sauce
A tangy and spicy addition to fish tacos, or really anything with a Mexican flair. 

Ingredients: 
1/3 cup sour cream 
1/3 cup mayonnaise 
1 tablespoon taco seasoning 
juice of 1 lime 

Directions: 
In a small bowl, whisk all ingredients together until smooth. Drizzle over tacos as desired.
