OLD FASHIONED GLAZED PUMPKIN COOKIES

Old-fashioned Glazed Pumpkin Cookies
Recipe from Crescent City Cooking by chef Susan Spicer of Bayona
Makes 2 to 3 dozen cookies. Prep time: 35 minutes
2 cups flour
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground cloves
1 teaspoon salt
1 teaspoon baking soda
½ pound (2 sticks) unsalted butter
½ cup brown sugar
¾ cup granulated sugar
1 egg
1 cup canned pumpkin puree
1 cup chopped walnuts
1 cup raisins
Preheat oven to 350°F and grease the baking sheets. Sift the flour, cinnamon, ginger, cloves, salt and baking soda into a large bowl or onto a sheet of parchment paper.
Cream the butter and both sugars in the bowl of an electric mixer, using the paddle attachment. Add the eggs and pumpkin and mix until fluffy. Stir in the sifted ingredients at a slow speed, until just mixed, then stir in the walnuts and raisins. Drop by the tablespoon onto greased cookie sheets and bake for about 12 minutes, until the tops are set and the cookies are golden around the edges. Use a fork to drizzle glaze onto the cookies after they have completely cooled.
