 2 large sweet onions, chopped

6 skinned and boned chicken thighs

2 skinned and boned chicken breast halves

2 cups frozen baby lima beans, thawed

1 (9-oz.) package frozen shoepeg corn, thawed

Arrange onions in a 6-quart slow cooker; place chicken over onions. Top with lima beans and next 10 ingredients.

Step 2

Cover and cook on LOW 6 to 7 hours or until chicken is tender. Remove chicken; shred and return to slow cooker. Remove and discard lemon slices.

     

 1 cup chopped celery

1 lemon, sliced

6 garlic cloves, sliced

1 teaspoon kosher salt

1 teaspoon dried Italian seasoning

1 teaspoon dried oregano

1/2 teaspoon freshly ground black pepper

       

 3 (14 1/2- oz.) can chicken broth

1 (28-oz.) can diced tomatoes

Garnishes: lemon slices and fresh flat-leaf parsley
