The Other Chili
2 lbs lean ground beef
1 qt tomato juice
1 29 oz can tomato purée
1 15 oz can red kidney beans, drained
1 15 oz can pinto beans, drained
1 large onion, chopped, about (1 1/2 cups)
1/2 cup diced celery
1/4 cup diced green bell pepper
1/4 cup chili powder
1 tsp ground cumin
1 1/2 tsp garlic powder
1 tsp salt
1/2 tsp ground black pepper
1/2 tsp dried oregano
1/2 tsp sugar
1/8 tsp cayenne pepper
Brown ground beef. Drain off fat. Age remaining ingredients to a 6-quart pot. Cover pot and simmer 1 1/2 hours stirring every 15 minutes or in a crock pot on low for 4 hours. Serve as is or garnished with grated cheese, chopped green onions, chopped green peppers etc.
