GRILLED CORN, TOMATO AND BASIL SALAD

Grilled Corn, Basil & Tomato Salad

Grilled Corn, Basil and Tomato Salad brings fresh and flavorful straight to your next picnic, barbecue or luncheon.
Serves: 4 servings
  • 4 ears fresh corn, husked
  • ¼ cup extra-virgin olive oil, plus extra for grilling corn
  • 1 tablespoon red wine vinegar
  • 3 medium roma tomatoes, chopped ( or 1 pint grape tomatoes, chopped)
  • ½ cup crumbled feta cheese
  • 2 tablespoons chopped fresh basil
Instructions
  1. Brush ears of corn with olive oil.
  1. Roast corn on the grill, turning often until desired doneness. (about 5-7 minutes)
  1. (Steam the corn if you prefer.)
  1. Cool corn, cut from cobs.
  1. Whisk ¼ cup olive oil and 1 tablespoon red wine vinegar in a medium bowl to blend.
  1. Stir in corn, tomatoes, feta and chopped basil.
  1. Toss to coat.
Notes
Add more chopped basil if desired.
