Christmas Cookie Class Recipes
Italian Ricotta cookies:
1/2 lb softened butter
2 c sugar
1/2 tsp salt
1 lb ricotta cheese
2 eggs
1 tsp anise or vanilla extract
4 1/2 c flour
2 tsp baking powder
1 tsp baking soda
I'm large mixing bowl beat the butter & sugar. Add eggs, ricotta & vanilla. Beat until creamy.
Sift flour, baking powder, baking soda & salt.
Add to the batter slowly until just mixed.
Drop by teaspoon full on greased baking sheet.
Bake in a 350 degree oven for 10 mins.
Let cool.
Icing: 2 c confectionary sugar, 4 tbs milk mixed well together in a bowl.
Drizzle over cooled cookies and add sprinkles.
