CATFISH PARMESAN


Catfish Parmesan
Serves 6

2 1/2 lbs catfish fillets
​1 cup breadcrumbs
​3/4 cup Parmesan cheese, freshly grated
1 teaspoon paprika
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/2 teaspoon black pepper
2 tablespoon unsalted butter, melted
1 lemon, cut in wedges
1/4 cup fresh parsley, chopped

Preheat oven to 375˚F.

Pat fish dry. Combine bread crumbs, cheese, and seasonings; mix well. Dip catfish in melted butter and roll in the crumb mixture. Arrange fish on a baking sheet sprayed with nonstick vegetable oil spray. Bake for about 25 minutes or until fish flakes easily when tested with a fork.

​Garnish with lemon and parsley
