BORDELAISE SAUCE


Bordelaise Sauce
Makes about 1/3 cup

1/4 cup (1/2 stick) salted butter
2 tablespoons olive oil
3 to 5 garlic cloves, coarsely chopped
1/2 teaspoon salt
1/4 teaspoon ground white pepper
1 tablespoon fresh parsely, minced

In small sauce pan melt the butter over low heat.
Add olive oil and warm for 2 to 3 minutes, then add garlic, salt, pepper.
Cook over low heat for   4 to 5 minutes or just until garlic begins to brown (be careful you don't burn garlic, otherwise you will have ot start over)
Turn off the heat and quikly remove the garlic with a slotted spoon or fine mesh skimmer.
Add the parsely and mix.

Serve over your favorite pasta
