FIG MASCARPONE HONEY CAKE


My earliest memory of figs are always connected to times at my grandparents home. They have a fig tree in their backyard that grows these beautiful fruits. After each fig season, the tree is stripped bare and many months pass before it comes back to life. In the spring the tree is back to full bloom and every branch is loaded with these little gems. This year my grandma and I anxiously waited untill they were ready to pick. When I was finally able to take home a bag full of figs I baked this fig mascarpone honey cake. These memories are what inspired this recipe

Honey Cake Recipe

  • Unsalted butter, softened, for pan
  • 1 3/4 cups all-purpose flour, plus more for dusting
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon coarse salt
  • 1/2 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup packed light-brown sugar
  • 1/2 cup plus 2 tablespoons best-quality honey
  • 1/2 cup milk
  • 1/2 cup vegetable oil

Instructions

1. Preheat oven to 325 degrees. Butter 2 6-inch pans or 1 8-inch pan. Butter and flour the pans, tap out excess. 

2. Whisk together the flour, baking powder, baking soda, salt, and cinnamon in a bowl; set aside.

3. Next, mix eggs, sugar, and brown sugar, on high speed with an electric mixer until pale and thick, about 2 minutes.

 4. In a separate bowl whisk together honey, milk and oil. 

5. With mixer on low, add honey mixture to egg mixture and mix until combined, about 1 minute. 

6. Add half the flour mixture; and with a spoon mix until smooth. Mix in remaining flour mixture. 

7. Pour batter into prepared pans.

8. Bake until dark golden brown and a toothpick in center comes out clean, about 45 minutes. 

9. Let cool in pans on a wire rack for 15 minutes. Run a thin knife around edge of cake; carefully remove sides of pan.


    Sweet Mascarpone Frosting

    1 cup. Mascarpone 

    1/4 cup. Heavy Whipping Cream

    2 tbsp. Sugar

    1/2 tsp. vanilla extract

    1. In a bowl add the mascarpone, heavy cream, sugar, and vanilla; with electric mixture on medium, mix until well combined about 1 minute.  

    2. Lastly, top the cake with Black Mission Figs.
