Cajun Smothered Corn
CAJUN SMOTHERED CORN 6 to 8 servings
3 strips bacon, cut into 1/2-inch pieces
1 cup finely chopped onion
1 small red bell pepper, stemmed, seeded and minced
1 rib celery, finely minced
2 medium cloves garlic, peeled and minced
4 cups defrosted frozen corn kernels
1 cup canned tomatoes, broken up
3/4 teaspoon paprika
1 teaspoon dried basil, crushed
1/4 teaspoon dried thyme, crushed
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
Freshly ground black pepper to taste
1 tablespoon lime juice
1. Put the bacon into a saucepan, set over medium heat and fry until crisp. Remove the bacon with a slotted spoon to a paper towel-lined plate.
2. Put the onion, bell pepper, celery and garlic into the pan. Saute 3 minutes. Cover the pan and cook 5 minutes.
3. Add the corn, tomatoes, paprika, basil, thyme, cayenne, salt and pepper. Cook over medium heat, stirring often, for 5 minutes, or until the corn is heated through and flavors have blended.
4. Add the bacon and lime juice. Stir 1 minute and serve.
