MUSHROOM HOAGIE

EPIC Mushroom Hoagie

Ingredients
  • 10-12 mushrooms, whole
  • 1/2 cup flour
  • 1-2 tsp garlic powder
  • 1-2 tsp onion powder
  • 1 tsp paprika
  • 2 tsp oregano, dry
  • 1/2 tsp thyme, dry
  • S&P
  • 1. cup milk, plant-based
  • 1/4-1/3 cup water
  • 1 cup panko bread crumbs
  • 1 tsp garlic/onion powder, S&P
  • 1/4 tsp turmeric (optional for colour)
  • 1 tsp oil
  • 1/2 red pepper, thin slices
  • 1/2 yellow pepper, thin slices
  • 1/2 onion, thin slices
  • 1 clove garlic, crushed
  • 1/2 cup mozza cheese, vegan (optional)
  • 1-2 cup marinara sauce*
  • 1/2 cup adobo cashew cream drizzle*
  • 2 tbsp parsley, chopped
  • 1 tsp hot pepper flakes, to taste
  • 1-2 tsp oregano, dry
Instructions
  1. Preheat oven to 425 FLine baking sheet with parchment paper.
  2. Mushrooms* (don't go too big with the mushrooms or they take a long time to cook)Pat whole mushrooms dry - set asideWhisk all spices, milk, water, and flour in a medium bowl. If you want a thinner batter on the mushrooms, add a bit more water to loosen the consistency.  Should be about the consistency of pancake batter.Place panko, S&P, 1 tsp garlic/onion powder to another bowl.Dip mushrooms, one at a time in batter (let extra batter fall away) then into the panko crumbs.  Place on prepared baking sheet.Place in oven for 25 minutes, flip the mushrooms for even browning. Back into the oven for 10-20 minutes - depending on the size of the mushrooms. Smaller mushrooms can be done in 25-30 minutes but the larger ones take up to 45+ minutes.
  3. Peppers and OnionsSlice peppers and onions long and slim.  Place in a skillet over high with 1 tsp of oil.  After the peppers and onions have been cooking ~5 minutes, add 1 crushed garlic clove and S&P to taste.  Adjust heat if necessary.  Continue to cook until the peppers and onions are brown on the edges and caramelized. I leave them a bit firm.
  4. Marinara*  Use your favourite store-bought marinara or try this recipe.Adobo Cashew Cream* 5 minute recipe below.Vegan mozza cheese (optional)
  5. Putting it all togetherCut your bun/loaf open. Broil or grill until toasty.Slather both sides with marinara.Pile on a layer of mushrooms, cheese, peppers-onions, a drizzle of cashew cream, chopped parsley, and hot pepper flakes, top off with the lid.
  6. Adobo Cashew Cream Drizzle
    Place 1/2 cup raw cashews, 1/2+ cup boiling water (start with 1/2 cup and add more if you want a looser sauce), garlic, 1-2 peppers in adobo sauce, 1 tbsp nutritional yeast (you can skip if you don't have), S&P into a high-power blender such as a Vitamix - blend until smooth.
