WHITE BEAN and TUNA SALAD

WHITE BEAN AND TUNA SALAD
Makes 3 servings

2 tablespoons lemon juice
1 tablespoon olive oil
1/4 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon dried oregano
1 (20-ounce) can cannellini beans, drained and rinsed
1 (6-1/2-ounce) can solid white tuna in spring water, drained, flaked
4 green onions, thinly sliced
2 tablespoons chopped fresh parsley
Lettuce leaves

Stir together first 5 ingredients. Add beans and next two ingredients and toss gently to coat. Sprinkle with parsley, and serve over lettuce.
