POTATO TORNADOS

You will need:

6 oven-proof skewers

Ingredients

  • 6 new potatoes
  • 1 tbsp malt vinegar
  • 2 tbsp olive oil
  • 1 garlic clove, crushed
  • 2 tsp finely-chopped flat-leaf parsley
  • 1 tsp finely-chopped thyme
  • Salt and pepper

Method

  1. Insert a skewer through a small new potato. Holding a sharp knife at an angle, slice the potato at one end through to the skewer and rotate the potato in the opposite direction to the blade. Gently fan-out the potato to form a spiral until you have an even gap between the slices. Repeat for the other potatoes.
  2. Whisk together the vinegar, olive oil, garlic and fresh herbs. Brush over the spirals and roast for 30 minutes. Serve hot.
