You will need:
6 oven-proof skewers
Ingredients
- 6 new potatoes
- 1 tbsp malt vinegar
- 2 tbsp olive oil
- 1 garlic clove, crushed
- 2 tsp finely-chopped flat-leaf parsley
- 1 tsp finely-chopped thyme
- Salt and pepper
Method
- Insert a skewer through a small new potato. Holding a sharp knife at an angle, slice the potato at one end through to the skewer and rotate the potato in the opposite direction to the blade. Gently fan-out the potato to form a spiral until you have an even gap between the slices. Repeat for the other potatoes.
- Whisk together the vinegar, olive oil, garlic and fresh herbs. Brush over the spirals and roast for 30 minutes. Serve hot.
