COLCANNON

Colcannon
Mashed potatoes with cabbage and green onions

4 cups finely shredded green cabbage
4 Tbs butter
1/4 to ½ cup lukewarm milk
6 green onions, chopped
4 cups mashed potatoes
1 tsp. Salt
pepper
1 Tbsp finely chopped parsley

Boil cabbage 10 minutes or until tender. Drain. Add 2 Tbsp melted butter. Cover and set aside. Stir cooked cabbage and scallions into butter. Cover and set aside. Stir cooked cabbage and scallions into mashed potatoes. You may add butter and milk to adjust consistency. Season with salt and pepper. Transer to serving bowl and sprinkle with parsley to serve.
