Bacon Cheeseburger Soup

Serves 6
2 tablespoons olive oil
1 onion, medium sliced
12 ounces amber ale
2 cups chicken stock
1/2 cup half-and-half
1 cup sharp Cheddar cheese, grated
1 cup Gruyere cheese, grated
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
salt and pepper to taste
1½ lbs cooked hamburgers, coarsely chopped
1/4 head iceburg lettuce, shredded
6 slices bacon, cooked crips and coarsely chopped
12 cherry tomatoes, halved

1 small onion, chopped
ketchup
yellow mustard
Heat the olive oil in a 3 quart saucepan over medium heat. Add the onion and saute for 10 minutes.
Stir in the ale and chicken stock and bring to a rolling simmer. Add the half-and-half, cheeses, Worcestershire sauce and Dijon. Reduce to a gentle simmer for 5 to 10 minutes.
Taste the soup and season with salt and pepper, carefull here if your cooked burgers already are salty.
Fold in the cooked burgers and lettuce. Ladle into bowls and for garnish add crumbled bacon, tomatoes, chopped onion, croutons. Drizzle in ketchup and mustard and serve.
