Shrimp Fried Rice With Bok Choy
Serves 4
3 cups brown rice, cooked
2 tablespoons sesame oil
2 tablespoons soy sauce
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 lb shrimp(small shrimp are best), peeled & de-veined
4 cups bok choy
1 cup snow pea pods, chopped
1/2 cup water chesnuts, diced
1 cup carrot, shredded
Sauté the first five ingredients for 3 to 5 minutes, stirring occasionally to coat all the rice. Add the remaining ingredients and cook for 5 more minutes until the shrimp are pink and the vegetables are crisp-tender.
Note: If you like your vegetables softer put them in first and cook for 2 or 3 minutes before you add your shrimp. Then add shrimp and cook until done.
