FRIED OKRA FRITTERS - Appetizer

Fried okra frittersMakes 4 servings
2/3 cup shrimp, finely chopped
1/4 pound ground pork
1/4 cup minced celery
1/2 cup minced onion
1 teaspoon minced garlic
2 tablespoons minced fresh parsley
1/4 cup breadcrumbs, plus more as needed
Coarse salt, to taste
Cayenne, to taste
2 cups fresh okra, stemmed, washed and chopped
1 large egg
Oil for frying
In bowl, combine shrimp, pork and seasonings. Mix well. Add okra until just combined. Whisk egg and add to mixture until incorporated.
Form mixture into 2-inch patties. If mixture is too soft to form patties, add more breadcrumbs. Place patties in refrigerator for a few minutes to firm up.
Heat about 1 inch of oil in cast iron skillet. Gently place patties in oil, without overcrowding. Cook until crispy on one side and flip, about 2 to 3 minute on each side. Watch for overbrowning and reduce heat, if needed.
Season with coarse salt and serve.
