Mexican Street Corn Salad
Ingredients
- 2 lbs frozen corn, thawed (or fresh corn kernels cut off the cob)
- ¼ cup mayo
- 8 oz crumbled Cotija cheese (or use crumbled Feta instead)
- 1 jalapeno pepper, finely chopped
- 1 bunch cilantro, finely chopped
- 3 garlic cloves, minced
- 1 lime, squeezed
- Salt and paprika to taste
- Put corn, jalapeno, cilantro and garlic in a bowl and mix until combined.
- In a cup, mix the mayo and lime juice until combined.
- Add the mayo dressing to the corn mixture and mix until combined.
- Add the crumbled cheese to the corn mixture and mix until combined.
- Add salt and paprika to taste.
