MEXICAN STREET CORN SALAD

Mexican Street Corn Salad

Ingredients
  • 2 lbs frozen corn, thawed (or fresh corn kernels cut off the cob)
  • ¼ cup mayo
  • 8 oz crumbled Cotija cheese (or use crumbled Feta instead)
  • 1 jalapeno pepper, finely chopped
  • 1 bunch cilantro, finely chopped
  • 3 garlic cloves, minced
  • 1 lime, squeezed
  • Salt and paprika to taste


  1. Put corn, jalapeno, cilantro and garlic in a bowl and mix until combined.
  2. In a cup, mix the mayo and lime juice until combined.
  3. Add the mayo dressing to the corn mixture and mix until combined.
  4. Add the crumbled cheese to the corn mixture and mix until combined.
  5. Add salt and paprika to taste.
