Chicken I Don’t Know
- 2 tablespoons all-purpose flour
- 2 big (6 to 7 pounds) whole chickens (2 big fryer chickens, quartered, about 3 - 3 1/2 pounds each)
- Salt & ground red pepper
- 4 cups chopped yellow onions
- 1 cup chopped celery
- 1 cup chopped bell pepper
- 1 cup water
- 1 cup chopped parsley
- 1 tablespoon chopped garlic
- 1 small bay leaf
- 1 1/2 cups wine (Sauterne wine)
- 1 tablespoon soy sauce
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon bitters ( Angostura or Peychaud)
Grease the oven bag, put 2 Tb flour in the bag and shake, coating the sides well.
Step 2
Put the bag in a large pan, sprinkle the fryers with salt and pepper, then place in the bag.
Step 3
Add the onion, celery, bell pepper, parsley, garlic and bay leaf.
Step 4
Combine the Sauterne, soy sauce, Worcestershire and bitters -pour over the ingredients in the cooking bag - tie the bag.
Step 5
Punch 12 holes on top of the bag with a cooking fork., bake at 350F for 1 1/2 hours or until the chicken comes off the bone.
