Sweet Corn Pesto
Ingredients:
sweet corn pesto:
1 1/2 tablespoons unsalted butter
1 tablespoon diced shallot
1 heaping cup fresh corn kernels
1 garlic clove, thinly sliced
2 tablespoons slivered almonds
2 tablespoons extra virgin olive oil
3 tablespoons finely grated Parmesan
salt and pepper to taste
Directions:
1. For pesto: Melt butter in a skillet over medium-high heat. Add shallots, corn and garlic and sauté for 2 to 3 minutes. Season with salt and pepper. Remove from heat and transfer to a food processor. Allow mixture to cool, about 5 minutes. Add oil and almonds and pulse until mixture is evenly and finely ground. Fold in Parmesan and adjust seasonings.
