CHOW CHOW POTATO SALAD

Chow Chow Potato Salad
​If you’re looking for a quick, delicious potato salad with a Southern twist, this recipe is for you!
SERVINGS: 15 SERVINGS INGREDIENTS
3 1/2 pounds Yukon gold potatoes (peeled and cut into 1 - inch cubes) 1 tablespoon kosher salt
Freshly ground black pepper
1 cup mayonnaise
3 tablespoons yellow mustard
6 hard boiled eggs (peeled and chopped) 1/2 cup Loveless Mild Chow Chow 1/4 cup Loveless Sweet Pepper Relish Sweet paprika (for garnish)
Fresh chopped parsley (for garnish)
DIRECTIONS
1. ​Place potatoes in a medium saucepan; cover with cold water and kosher salt. Simmer until tender about 6 to 8 minutes; drain.
2. Inamediumbowl,combinemayonnaiseandmustard.Addpotatoes, chopped eggs, chow chow and pepper relish, and toss to combine.
3. Season with salt and pepper to taste. 4. Garnishwithpaprikaandparsley.
* if you like a little heat in your potato salad you can use our Hot Chow Chow or Hot Pepper Relish instead!
