Watermelon Gazpacho
• 3 cups seedless watermelon, cut into chunks
• 1 tomato, quartered
• 1 garlic clove, minced
• ½ onion, quartered
• 1 cucumber, quartered
• 1 lime, juiced
• ¼ bunch parsley, bottom stems removed
• ½ jalapeno pepper, finely chopped
• ½ tsp salt
• ⅛ tsp pepper
Instructions
1 Put all ingredients in a food processor or blender and pulse until desired consistency (do not overblend).
2 Refrigerate gazpacho for 1 hour or until fully chilled.
