Ingredients
2 cans (24 ounces) water-packed albacore tuna
2 cans (30 ounces) navy beans
1 sweet red pepper, chopped
1 cup fresh parsley, roughly chopped
2 cloves garlic, pressed
½ cup plain Greek yogurt
⅓ cup mayonnaise
juice and zest of 1 small lemon
½ teaspoon salt
½ teaspoon freshly ground black pepper
Instructions
Drain excess water from tuna. Drain and rinse beans.
Combine all ingredients in a large serving bowl. Serve with whole wheat pita bread or as a sandwich filling. Try it on a bed of greens for a light supper.
