SPICED CARROT, CAPSICUM AND CORN FRITTERS

  • cooking oil spray
  • 1 small red onion, finely chopped
  • 1 clove garlic, crushed
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 eggs
  • 1/4 cup skim milk
  • 1/2 cup self-raising flour
  • 1 cup fresh corn kernels
  • 300g carrots, peeled, grated
  • 1 small red capsicum, diced
  • 2 tablespoons chopped fresh coriander leaves

Instructions

Step 1Place a small frying pan over medium heat and spray with oil. Add onion and cook for 5 minutes or until softened. Add garlic and spices and cook, stirring, for 1 minute. Set aside to cool.
Step 2Whisk eggs, milk and flour in a bowl. Stir in corn, carrot, capsicum, coriander and onion mixture and season with black pepper.
Step 3Place a large non-stick frying pan over medium heat and spray with oil. Spoon 1/4 cup of mixture per fritter into pan, 3 fritters at a time. Cook for 3 minutes each side or until golden. Repeat to make 12 fritters. Serve.
