Crinkle Coffee Cookies
These crinkle cookies have a little bit of coffee in them to add a little extra flavor.
Ingredients
• ½ cup softened unsalted butter
• ½ cup light brown sugar
• ¼ cup sugar + more for coating
• 4 TBSP brewed Community® coffee American Classic™ blend {cool in the fridge before using}
• 1 egg yolk
• 1 tsp vanilla extract
• 2 cups flour
• ¼ tsp salt
Instructions
1. Preheat your oven to 350 degrees and spray a cookie sheet with non-stick spray.
2. Use a stand mixer {or hand mixer, but it will take longer} to combine the butter and sugars until well combined, about 1 minute. Be sure to scrape the edges to get it all mixed in! Then add the egg yolk, coffee, and vanilla extract and combine for another minute or so.
3. Add flour and salt and mix until fully combined. Roll dough into small balls and roll around in a small bowl of sugar.
4. Bake for about 10 minutes and then take them out. Using a spoon, very gently tap down on them a couple of times to get them to “crinkle”. Put back in oven until finished baking, about 2-3 more minutes.
5. Allow to cool and enjoy with a delicious cup of coffee!
