Red Cabbage with Apples
3 pounds red cabbage
2/3 cup red wine vinegar (preferably homemade)
2 Tbsp sugar
2 Tbsp salt
2 Tbsp bacon fat
2 apples, peeled, sliced
1 large onion, peeled, sliced
3 cloves
2 bay leaves
3 Tbsp. Red wine
3 cups water
Wash and shred cabbage. Drop into large bowl, sprinkle with vinegar, sugar and salt. Mix well. In heavy casserole melt bacon fat. Add cabbage, apples, onion, cloves, bay leaves and wine. Stir thoroughly, add the water, Bring to a boil over high heat, then reduce heat to it’s lowest point. Cover and simmer for an hour or so, or until cabbage is tender. Check from time to time to make sure cabbage is still moist. Add water if needed.
