Mango Jam
4 c. mango pulp (buy about 6 lb.)<?xml:namespace prefix = o ns = "urn:schemas-microsoft-com:office:office" />
¼ c. lemon juice
6 c. sugar
1 pack powdered pectin
Wash fruit, peel, seed and cube. Mash but do not puree.
In 10-qt. pan, mix fruit, lemon juice and pectin. Place over high heat, stirring constantly. Bring to a rolling boil that cannot be stirred down.
Still stirring, add sugar.
Return to rolling boil, then boil for exactly two minutes. Remove from heat; skim off foam.
Ladle into prepared half-pint jars. Seal; process in boiling water bath for 10 minutes.
Can't remember where I got it but it is NOT original and I cut the sugar to 5 cups. And yes, it still set perfectly well even with substantially reduced sugar.
