PLANTATION RELISH

Ingredients

  • 1 gal. green tomatoes
  • 1 gal. cabbage
  • 1 gal. bell peppers
  • 1 gal. onions
  • 1 few cucumbers
  • 1 stalk celery
  • 1 large cauliflower
  • 1 c. salt
  • 3 qt. vinegar
  • 2 lb sugar
  • 1 heaping c. flour
  • 5 Tbsp Colman’s mustard
  • 4 Tbsp celery seed
  • black pepper
  • small jar pickled onions

Directions

    Pour one cup of salt over first 6 ingredients - cover with water and let stand overnight. The next morning, drain well. Cook cauliflower slightly and seperately in small pieces. Cook sauce until it thickens, then add all ingredients; let come to a boil and cook about 20 min or more. Place in sterilized jars. This is delicious with all meats.
