"Gribiche sauce is a mixture of mayonnaise, lots of fresh herbs, chopped eggs, capers, pickles, and more. It makes everything from steamed vegetables to sauteed fish taste delectable, especially these green beans," Malakasis writes.
Green Beans with Gribiche Sauce
Makes 8 servings
1 pound fresh thin green beans, trimmed (or haricots verts)
2 tablespoons capers, drained
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chervil
1 tablespoon chopped fresh tarragon
1/2 teaspoon table salt
14 teaspoon freshly ground black pepper
6 small sweet gherkin pickles, diced
2 large hard-cooked eggs, peeled and chopped
1-1/4 cups mayonnaise
1/4 cup red wine vinegar
Cook green beans in boiling salted water to cover in a Dutch oven 4 minutes or until crisp-tender; drain. Plunge beans into ice water to stop the cooking process; drain.
Place capers and next 8 ingredients in a medium bowl. Add mayonnaise and vinegar, stirring until blended. Place green beans on a serving platter. Drizzle sauce over green beans, and serve immediately.
