FRESH FIG SALSA - Appetizer

This salsa is terrific on top of grilled chicken, fish or pork. It comes together in minutes. The recipe can easily be cut in half for a couple of servings or doubled for parties.
Fig SalsaMakes 4 cups
8 ripe fresh figs, cut into eighths
4 tablespoons red onion, finely chopped
Serrano chili pepper
Juice and zest of 1 lemon, finely grated
2 tablespoons cilantro, chopped
2 teaspoons olive oil
Salt, to taste
Combine all ingredients in a bowl and toss together. Cover tightly and refrigerate until serving.
