Creamy Parmesan Dressing
Makes 8 servings
1/2 cup canned low-sodium white navy beans, rinsed, drained
1/4 cup plain lowfat yogurt
1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon cider or white vinegar
1 clove garlic, minced
1/8 teaspoon onion powder
2 tablespoons grated Parmesan cheese
Combine all ingredients in a mini-chopper or blender. Blend until smooth.
Chill before serving.
