PICKLED HERRING IN CREAM SAUCE - Appetizer

Pickled Herring in Cream Sauce
Makes 8 servings
2 (16-ounce) jars pickled herring fillets in wine sauce
2 pints sour cream
2 cups thinly sliced red onions
2 cups sliced scallions
Juice of 1 lemon
1/3 cup sugar
Lemon slices for garnish
Strain and use only the herring. Run under cold water and pat dry. In a large bowl combine sour cream, red onions, scallions, lemon juice and sugar. Mix well. Fold in herring and marinate overnight.
Before serving, garnish with lemon slices.
