CRABMEAT RAVIGOTE

Crabmeat Ravigote
Makes 8 appetizer servings
1/2 cup mayonnaise
2 tablespoons cider vinegar
1 tablespoon Creole mustard
1/4 cup heavy whipping cream or half-and-half
1 green onion, green part only, finely chopped
3 sprigs flat-leaf parsley or 6 chives, chopped
2 tablespoons small capers, drained
1/2 teaspoon dried dill
1/2 teaspoon salt
Pinch ground white pepper
Dash Tabasco
Lime wedges for serving
1 pound crabmeat, whatever type you can afford
Whisk all ingredients except crabmeat and limes in a medium bowl.
Pick over the crabmeat for shell bits. Gently stir crabmeat into the sauce. Refrigerate an hour or two before serving with lime wedges.
