BANANA pudding

SOUTHERN BANANA PUDDING
3-1/2 tablespoons all-purpose flour

1-1/3 cups sugar

dash of salt

3 egg yolks

3 cups of whole milk

1 teaspoon vanilla extract

1-1/2 boxes of vanilla wafers (the recipe only calls for one box but I love a lot of wafers)

6 medium bananas

Combine flour, sugar, and salt in heavy saucepan. Beat egg yolks; combine egg yolks and milk, mixing well. Stir into dry ingredients; cook over medium heat, stirring constantly, until smooth and thickened. Remove from heat; stir in the vanilla.
Layer one-third of the vanilla wafers in a 4 quart baking dish. Slice 2 bananas; layer over wafers. Pour one-third of the filling over bananas. Repeat layers twice. Yield: 10 servings
