Green Apple Mignonette
- 1/3 cup finely chopped Granny Smith apple (about 1/4 large apple)
- 2 tablespoons minced shallot
- 1/2 cup rice vinegar
- 2 teaspoons minced fresh cilantro
- 1 1/2 teaspoons fresh lime juice
- 1 teaspoon sugar
- Kosher salt Freshly ground black pepper
Stir together first 6 ingredients, and add salt and pepper to taste. Let stand 20 minutes before serving.
