CARROT BREAD WITH ORANGE ZEST



INGREDIENTS
¾ Cups Granulated sugar
¼ Cups Brown sugar
2Eggs
¾ Cups Veg oil
Cups Grated carrots
1 Tablespoon Orange zest
1 Teaspoon Vanilla extract
1½ Teaspoons Ground cinnamon
⅛ Teaspoons Salt
2 Cups Flour
2 Teaspoons Baking powder
1 Teaspoon Baking soda
Optional:
1Teaspoon Allspice
½ Teaspoons Ground nutmeg
1 Teaspoon Ground ginger
¾ Cups Raisins

Mix the sugars. Break in the eggs and mix. Add in the oil and mix further. Add in the carrots, vanilla, spices, salt & orange zest. Sift the flour, baking powder and baking soda. If you don't have a sieve, combine the dry ingredients in a separate bowl. Grease your loaf pan and turn on the oven to 350 before mixing the wet and the dry ingredients. Gently fold in the mixtures. If using raisins add them now.

Bake @ 350 for 40-50 mins or until a toothpick comes out clean when inserted or the surface feels firm to the touch.
