EGGNOG DAIQUIRI



My favorite daiquiri shop in New Orleans is located near “the place that pays me” (lol) on Elysian Fields. Why is this my favorite daiquiri shop? It’s pretty clean, they treat you like family, and on a Friday night it has a great club/lounge feel (so if you’re ever in New Orleans, check it out or go to Gene’s). Anyway, every autumn they create a Cajun Eggnog which is amazing! The following recipe is my attempt at recreating the daiquiri from Daiquiris and Company at home. Enjoy! If serving to children, you’re welcome to leave out the rum and bourbon. Garnish with cinnamon sticks, more nutmeg, chocolate and/or peppermint shavings or for a decedent flavor Bailey’s Irish Cream, cinnamon spice or mocha Kahlua.


Cajun Eggnog “Daiquiri”

Ingredients

1 1/2 gallon good quality ice cream (french vanilla or eggnog flavor)

1 gallon good quality eggnog (My favorite can be purchased from Pittsford Dairy)

1 cup bourbon

1/2 cup good quality dark rum

1 tablespoon freshly ground nutmeg

1/2 tablespoon ground saigon cinnamon

Directions

In a blender combine 1/2 of ice cream, 1/2 of eggnog, bourbon, rum, nutmeg and cinnamon. Blend on low until well incorporated. Scoop mixture into glasses by 1/3- 1/2 cup full. Pour an additional 1/2 cup of eggnog over ice cream mixture. Add additional accouterments if you desire. Serve cold.

Serves 6-8.
